Do you love mushrooms? So do we!
We were looking for something different to do for dinner, and decided to make Chicken and Mushroom tacos. They were terrific, and even my husband, who is not a chicken fan, enjoyed them! What I loved most is that, except for slicing the chicken, my kids made the entire dinner themselves!
Ingredients:
4 large skinless boneless chicken breast
1 package of Kitchen Pride sliced mushrooms
1 large yellow sweet onion
2 tbsp cumin
flour tortillas
monterey jack or pepper jack cheese
sour cream
Sautee the chicken breast in large skillet on medium heat until brown on each side. Remove from heat and slice into medium size chunks, return to skillet. Add sliced onion and mushrooms, with 2 pats of butter. Cook until onions are tender. Add cumin, salt and pepper, and stir until well incorporated. Serve on flour tortillas with monterey jack or pepper jack cheese and sour cream.
Feeds 2 adults and 3 kids, although one of those kids ate like 5 tacos!
